A mother in desperation, I perused the isles at the store looking for a sweet snack for the kids that wasn’t packed with hydrogenated oil, high fructose corn syrup and a few other ingredients that are not a language I understand.
I had a notable foodie breakdown in Bel-Air and whaled out, “They don’t exist!” the healthier snacks that is.
I left the store with a bushel of oats, peanut butter, unsweetened chocolate powder and told my brain to get with the program.
I looked through my cupboards and pulled out an array of spices from sassafrasspantry.com (gourmet spices for an unbeatable price shipped right to your door!), I grabbed cinnamon, sea salt, vanilla extract, and nutmeg. I remembered my friend gave me the most divine local honey, thank you Angela!
Then, I did what my mom taught me to do, “just start throwing stuff in there until it looks right”, she used to say that all the time.
Please excuse the way we measure when we are in ‘creation’ mode… you can thank my mother for that.
SEA SALT PB AND CHOCO ENERGY BITES
4 6-8 oz mason jars of oats
4 tablespoons of peanut butter
1/4 cup chocolate powder (unsweetened)
Honey – drizzle and count to 6
Vanilla Extract 2 cap fulls
Cinnamon- tablespoon
Nutmeg-2 teaspoons
Sea Salt- 4 pinches
Add all of these ingredients to a mega huge bowl. Ditch your kitchen tools and use your clean hands, this will take a bit of elbow grease.
Mix and knead with your hands until well mixed and the batter appears moist and dark.Then roll into uniform balls and refrigerate for at least two hours.
My children love these! Great for lunches, and snacks on the go.
